Environs Cranberry Pie

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 4 cups fresh cranberries
  • 3 tablespoons cornstarch
  • 1 egg, lightly beaten
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups sugar
  • 2 pie crusts, top and bottom

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 wash cranberries and drain.
  • 3 chop cranberries by hand or in food processor, then mix with sugar and cornstarch.
  • 4 mix egg with vanilla extract, then add to cranberries.
  • 5 mix until combined.
  • 6 put bottom crust over pie pan.
  • 7 pour mixture into bottom crust.
  • 8 cut top crust into strips.
  • 9 cover fruit with strips of pastry into lattice.
  • 10 bake at 400 degrees for 10 minutes.
  • 11 reduce heat to 350 degrees and bake for 45 minutes or until fillings bubble and pastry brown.
  • 12 service with whipped cream or ice cream.
