Salmon Cucumber Cups

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • 3 english cucumbers
  • 2 cups boursin cheese
  • 1/3 lb smoked salmon, cut into thin strips (1/2 inch long)

Recipe

  • 1 slice cucumbers into ½ inch rounds.
  • 2 with a melon baller, scoop out the center of each round, leaving bottom intact, to make shallow cups.
  • 3 using a pastry bag or spoon, fill cucumber cavities with cheese and top each with a strip of salmon.
