Rolled Molasses Wafers

Ingredients

  • 1/2 cup molasses
  • 1/4 cup shortening
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup sifted pastry flour
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 egg, well beaten
  • 3 cups confectioners' sugar
  • 1 egg , unbeaten
  • 1 teaspoon vanilla extract, lemon extract or 1 teaspoon rum extract
  • 1/3 cup butter
  • 1 tablespoon molasses
  • 2 tablespoons milk

Recipe

  • 1 heat molasses to boiling point. add shortening sugar and salt. sift together flour and spices, add alternately with beaten egg. drop by teaspoonful on a well greased cookie sheet. bake at 300f for about 10 minutes. cool 2 minutes and curl around a wooden spoon handle that has been greased. cookies may be filled with molasses butter frosting. (if cookies become too crisp to roll, heat a few minutes in oven.) for best results on this recipe, use fancy molasses, "lite" molasses is not recommended.
  • 2 molasses butter frosting:.
  • 3 add 1 cup confectioners sugar, egg and flavoring to creamed butter. mix well. add remaining confectioners sugar alternately with molasses and milk. beat well.
