Fresh Peach Cobbler (vegan)

Ingredients
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 4 cups sliced peaches
- 1 cup water
- ground cinnamon (for sprinkling)
- 1 cup whole wheat pastry flour
- 2 tablespoons sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 tablespoons margarine (i personally use vegan "smart balance")
- 1/2 cup soymilk
Recipe
- 1 preheat oven to 400 degrees f.
- 2 combine sugar and cornstarch in a saucepan.
- 3 add in water and peaches.
- 4 bring to a boil.
- 5 stir constantly for 1 minute.
- 6 pour into a baking dish and sprinkle with cinnamon.
- 7 combine flour, sugar, baking powder, and salt.
- 8 cut in margarine until mixture has a cookie dough like consistency.
- 9 stir in soymilk until mixed.
- 10 drop by spoonfuls on the fruit (it won't cover it completely, but will when it bakes).
- 11 bake for about 25-30 minutes.
