Strawberry Scones

Ingredients

  • Servings: 8
  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/3 cup butter
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1/4 cup whipping cream
  • 1/4 cup buttermilk
  • 1 cup strawberry, hulled and sliced
  • 1 large egg, beaten
  • 1 tablespoon whipping cream

Recipe

  • 1 combine flour, sugar, baking powder and salt in a large mixing bowl; cut in butter with a pastry cutter until coarse crumbs form.
  • 2 form a well in the center; set aside.
  • 3 whisk egg, vanilla, cream, and buttermilk together;
  • 4 stir into dry mixture until just moistened.
  • 5 fold in strawberries; gently knead dough on a lightly floured surface until smooth.about 10 seconds.
  • 6 pat into a 7" circle about 1" thick.
  • 7 slice into 8 wedges -- arrange on a parchment paper lined baking sheet.
  • 8 to prepare glaze:
  • 9 combine egg and whipping cream.whisk till frothy.
  • 10 brush with glaze and sprinkle with additional sugar is desired.
  • 11 bake at 375° until golden, about 15 minutes.
  • 12 cool on a wire rack.
