Scottish Shortbread

Total Time: 1 hr 45 mins Preparation Time: 45 mins Cook Time: 1 hr

Ingredients

  • 3 cups flour
  • 1 cup rice flour
  • 1 cup fine sugar (berry, aka bar sugar, extra finely ground granulated sugar)
  • 1 lb butter (at room temperature)

Recipe

  • 1 sift dry ingredients together.
  • 2 cut butter into dry ingredients with pastry blender.
  • 3 (you can work the dough with your fingers until it becomes soft and pliable like smooth pastry) divide dough into two balls.
  • 4 roll out on floured counter to 3/8 thickness.
  • 5 cut into christmas shapes or rounds.
  • 6 prick with a fork.
  • 7 place on lightly greased cookie sheet.
  • 8 bake at 325 for 20 to 25 minutes.
  • 9 the cookies will be light in color.
