Sibi's Crustless Cranberry Pecan Pie

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 12
  • 3/4 cup unsalted butter, melted
  • 1 1/2 cups granulated sugar
  • 3 eggs or 3/4 cup egg substitute
  • 1 teaspoon vanilla extract
  • 1 1/4 cups sifted whole wheat pastry flour
  • 1 1/2 cups fresh cranberries or 1 1/2 cups frozen cranberries
  • 1 cup finely chopped pecans

Recipe

  • 1 preheat oven to 375.
  • 2 grease pie plate/pan.
  • 3 beat butter, sugar, eggs and vanilla until thick and fluffy, about 5 minutes.
  • 4 fold in flour by hand.
  • 5 fold in cranberries and pecans.
  • 6 pour into prepared pan and spread evenly.
  • 7 bake 45 minutes or until cake tester comes out clean.
  • 8 serve hot or cold.
