Sibi's Crustless Cranberry Pecan Pie

Ingredients
- Servings: 12
- 3/4 cup unsalted butter, melted
- 1 1/2 cups granulated sugar
- 3 eggs or 3/4 cup egg substitute
- 1 teaspoon vanilla extract
- 1 1/4 cups sifted whole wheat pastry flour
- 1 1/2 cups fresh cranberries or 1 1/2 cups frozen cranberries
- 1 cup finely chopped pecans
Recipe
- 1 preheat oven to 375.
- 2 grease pie plate/pan.
- 3 beat butter, sugar, eggs and vanilla until thick and fluffy, about 5 minutes.
- 4 fold in flour by hand.
- 5 fold in cranberries and pecans.
- 6 pour into prepared pan and spread evenly.
- 7 bake 45 minutes or until cake tester comes out clean.
- 8 serve hot or cold.
