Pastry Cream ( For Filling Eclairs And Fruit Flans)

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • 2 eggs
  • 100 g caster sugar
  • 50 g flour
  • 10 g custard powder
  • 500 ml milk
  • vanilla pod or vanilla flavoring

Recipe

  • 1 whisk the eggs and sugar in a bowl until almost .
  • 2 mix in the flour and custard powder.
  • 3 boil the milk in a thick based pan.
  • 4 whisk onto the egg mixture, mix well.
  • 5 return to the heat and stir to the boil. add the vanilla.
  • 6 remove from the heat and pour into a basin. stir occasionaly to avoid a skin forming on the surface of the pastry cream.
  • 7 cool, and use as needed.
