Pastry From Glenn's Cookbook

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 5 cups flour (unsifted cake & pastry flour)
  • 1 teaspoon salt (heaping)
  • 1 teaspoon baking powder (level)
  • 1 lb lard (shorting)
  • 1 egg (beaten)
  • 1 tablespoon lemon juice

Recipe

  • 1 mix first 3 ingredients.
  • 2 cut in lard until coarse meal.
  • 3 1 egg in measuring cup.
  • 4 add the 1 tablespoon lemon juice to measuring cup.
  • 5 add water to measuring cup to make 1/4 cup liquid.
  • 6 add to dry ingredients & mix.
  • 7 do not stir.
  • 8 roll out to desired thickness on well floured pastry cloth or wax paper.
  • 9 roll out and use immediatly,
  • 10 keep frozen, or refrigerate for several weeks.
