Ricotta Tart

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 2 eggs
  • 1 cup part-skim ricotta cheese
  • 1 cup shredded cheddar cheese
  • 2 tablespoons salsa
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 9 inches unbaked pie shells

Recipe

  • 1 in a large bowl, beat eggs.
  • 2 add the cheeses, salsa, salt and pepper; mix well.
  • 3 roll out pastry crust into a 12" circle on a foil lined baking sheet.
  • 4 spread with cheese mixture to within 1" of edge.
  • 5 fold edge of pastry over outer edge of filling.
  • 6 bake at 400 degrees for 22-26 minutes or until golden brown. let stand for 5 minutes before cuttinginto wedges. refrigerate leftovers.
