Ricotta Tart

Ingredients
- 2 eggs
- 1 cup part-skim ricotta cheese
- 1 cup shredded cheddar cheese
- 2 tablespoons salsa
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 9 inches unbaked pie shells
Recipe
- 1 in a large bowl, beat eggs.
- 2 add the cheeses, salsa, salt and pepper; mix well.
- 3 roll out pastry crust into a 12" circle on a foil lined baking sheet.
- 4 spread with cheese mixture to within 1" of edge.
- 5 fold edge of pastry over outer edge of filling.
- 6 bake at 400 degrees for 22-26 minutes or until golden brown. let stand for 5 minutes before cuttinginto wedges. refrigerate leftovers.
