Pizza Dough

Ingredients
- 1 compressed yeast cakes or 1 package active dry yeast
- 2 cups water (80â° - 90â°f for compressed yeast, 105â° - 115â°f for dry yeast)
- 1 cup pastry flour
- 4 teaspoons sea salt
- 5 1/2-6 cups unbleached all-purpose flour
Recipe
- 1 in the bowl of a heavy-duty mixer fitted with a dough hook, stir the yeast into the lukewarm or warm water until it dissolves.
- 2 add the pastry flour and salt and mix well.
