Sausage And Spinach Pastry Puffs

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 3 sausages, diced to 1/2 inch squares (i prefer sweet)
  • 1 onion, diced
  • 1 lemon, zest of
  • 1 (8 ounce) box frozen chopped spinach
  • 1 1/2 cups grated parmigiano-reggiano cheese
  • 2 tablespoons dijon mustard
  • 2 sheets frozen puff pastry, defrosted
  • salt & fresh ground pepper
  • 2 tablespoons olive oil

Recipe

  • 1 preheat oven to 400f.
  • 2 heat oil in a skillet.
  • 3 brown sausages, about 3 minuted under medium heat.
  • 4 discard excess fat from the sausages from the pan.
  • 5 add onion to the pan, cook about 3 minutes.
  • 6 add salt and pepper to taste.
  • 7 let it cool for at least 10 minutes.
  • 8 squeeze out excess liquid from the chopped spinach by using a kitchen/paper towel.
  • 9 place spinach, lemon zest and grated parmiagiano reggiano in a bowl.
  • 10 add cooled sausage mixture into the spinach mixture, incorporate well. filling is now ready.
  • 11 cut each puff pastry sheets into 2 rectangles.
  • 12 brush the top layer with mustard.
  • 13 fill pastry sheets with filling.
  • 14 crimp the edges using a fork.
  • 15 cut 2 slits on top of each pastry.
  • 16 bake for 15-25 minutes until golden brown.
