Sausage And Spinach Pastry Puffs

Ingredients
- 3 sausages, diced to 1/2 inch squares (i prefer sweet)
- 1 onion, diced
- 1 lemon, zest of
- 1 (8 ounce) box frozen chopped spinach
- 1 1/2 cups grated parmigiano-reggiano cheese
- 2 tablespoons dijon mustard
- 2 sheets frozen puff pastry, defrosted
- salt & fresh ground pepper
- 2 tablespoons olive oil
Recipe
- 1 preheat oven to 400f.
- 2 heat oil in a skillet.
- 3 brown sausages, about 3 minuted under medium heat.
- 4 discard excess fat from the sausages from the pan.
- 5 add onion to the pan, cook about 3 minutes.
- 6 add salt and pepper to taste.
- 7 let it cool for at least 10 minutes.
- 8 squeeze out excess liquid from the chopped spinach by using a kitchen/paper towel.
- 9 place spinach, lemon zest and grated parmiagiano reggiano in a bowl.
- 10 add cooled sausage mixture into the spinach mixture, incorporate well. filling is now ready.
- 11 cut each puff pastry sheets into 2 rectangles.
- 12 brush the top layer with mustard.
- 13 fill pastry sheets with filling.
- 14 crimp the edges using a fork.
- 15 cut 2 slits on top of each pastry.
- 16 bake for 15-25 minutes until golden brown.
