Raspberry Date Squares

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • 2 cups frozen raspberries
  • 2 cups dates, pitted
  • 1/3 cup water, as needed
  • 2 cups whole wheat flour
  • 1/2 cup non-hydrogenated margarine
  • 4 cups quick oats
  • 1/2 cup sucanat
  • 3/4 cup vegetable oil
  • 2 tablespoons water

Recipe

  • 1 place dates, raspberries and water on the stove over medium heat to soften, add water as needed to make a thick date butter.
  • 2 combine margarine and flour with pastry blender until crumbly. stir in oats and sucanat. stir in vegetable oil and press 2/3 of mixture into a 9 x 9 pan.
  • 3 spread date mixture over and top with remaining crumbs.
  • 4 press lightly and bake at 350°f for 20 to 30 minutes, or golden brown on edges.
