Sharp Cheese Pastry ( For Apple Pie)

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • 2 cups enriched flour
  • 1/2 teaspoon salt
  • 1/2 cup sharp cheddar cheese, grated
  • 2/3 cup cold butter
  • 4 -5 tablespoons ice water

Recipe

  • 1 sift together the flour and salt.
  • 2 stir in grated sharp cheese.
  • 3 cut in cold butter.
  • 4 slowly add ice water and mix lightly with a fork.
  • 5 divide into 2 balls.
  • 6 chill at least 25 minutes.
  • 7 sprinkle some flour on flat surface.
  • 8 roll first ball of dough out slightly thinner than the regular plain pie pastry.
  • 9 line 9-inch pyrex pie plate with this crust.
  • 10 dot with 2 tablespoons butter, cut up.
  • 11 fill with your choice of apple pie filling.
  • 12 sprinkle more flour and roll out second ball of dough.
  • 13 cover filled pie with the second pie crust.
  • 14 crimp pie crust.
  • 15 bake in preheated 450 degree oven 10 minutes.
  • 16 reduce heat to 350 degrees and bake about 40 minutes more.
