Sharp Cheese Pastry ( For Apple Pie)

Ingredients
- 2 cups enriched flour
- 1/2 teaspoon salt
- 1/2 cup sharp cheddar cheese, grated
- 2/3 cup cold butter
- 4 -5 tablespoons ice water
Recipe
- 1 sift together the flour and salt.
- 2 stir in grated sharp cheese.
- 3 cut in cold butter.
- 4 slowly add ice water and mix lightly with a fork.
- 5 divide into 2 balls.
- 6 chill at least 25 minutes.
- 7 sprinkle some flour on flat surface.
- 8 roll first ball of dough out slightly thinner than the regular plain pie pastry.
- 9 line 9-inch pyrex pie plate with this crust.
- 10 dot with 2 tablespoons butter, cut up.
- 11 fill with your choice of apple pie filling.
- 12 sprinkle more flour and roll out second ball of dough.
- 13 cover filled pie with the second pie crust.
- 14 crimp pie crust.
- 15 bake in preheated 450 degree oven 10 minutes.
- 16 reduce heat to 350 degrees and bake about 40 minutes more.
