Simple Lemon Meringue Pie

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 1 baked 8 inch pie shell
  • 1/2 cup lemon juice
  • 1 teaspoon lemon rind, grated
  • 1 (15 ounce) can eagle brand sweetened condensed milk
  • 2 eggs, separated
  • 1/4 teaspoon cream of tartar
  • 4 tablespoons sugar

Recipe

  • 1 combine lemon juice and grated lemon rind.
  • 2 gradually stir lemon juice into sweetened condensed milk.
  • 3 add egg yolks and stir until well blended.
  • 4 pour into cooled pastry shell.
  • 5 in another bowl, add cream of tartar to egg whites, beat until almost stiff enough to hold a peak.
  • 6 add sugar gradually, beating until stiff but not dry.
