Rolled Molasses Wafers

Ingredients
- 1/2 cup molasses
- 1/4 cup shortening
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/2 cup sifted pastry flour
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 egg, well beaten
- 3 cups confectioners' sugar
- 1 egg , unbeaten
- 1 teaspoon vanilla extract, lemon extract or 1 teaspoon rum extract
- 1/3 cup butter
- 1 tablespoon molasses
- 2 tablespoons milk
Recipe
- 1 heat molasses to boiling point. add shortening sugar and salt. sift together flour and spices, add alternately with beaten egg. drop by teaspoonful on a well greased cookie sheet. bake at 300f for about 10 minutes. cool 2 minutes and curl around a wooden spoon handle that has been greased. cookies may be filled with molasses butter frosting. (if cookies become too crisp to roll, heat a few minutes in oven.) for best results on this recipe, use fancy molasses, "lite" molasses is not recommended.
- 2 molasses butter frosting:.
- 3 add 1 cup confectioners sugar, egg and flavoring to creamed butter. mix well. add remaining confectioners sugar alternately with molasses and milk. beat well.
