Silverbeet And Fetta Triangles

Ingredients
- 1 small bunch silver beet
- 200 g greek feta cheese
- 2 slices frozen puff pastry sheets
- 1 egg
- 1/2 lemon, juice of
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons butter
- 1 tablespoon olive oil
Recipe
- 1 clean and roughly chop silverbeet.
- 2 melt butter with olive oil in large saucepan.
- 3 saute silverbeet until it reduces in size and goes limp.
- 4 add salt, pepper and lemon juice.
- 5 remove from heat and allow to cool.
- 6 preheat oven to 220 degrees c.
- 7 combine with crumbled feta cheese.
- 8 divide mixture into each puff pastry slice.
- 9 turn puff pastry corner to corner to make a triangle and press ends together.
- 10 brush with beaten egg.
- 11 bake in oven for 20 minutes.
