Silverbeet And Fetta Triangles

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 1 small bunch silver beet
  • 200 g greek feta cheese
  • 2 slices frozen puff pastry sheets
  • 1 egg
  • 1/2 lemon, juice of
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons butter
  • 1 tablespoon olive oil

Recipe

  • 1 clean and roughly chop silverbeet.
  • 2 melt butter with olive oil in large saucepan.
  • 3 saute silverbeet until it reduces in size and goes limp.
  • 4 add salt, pepper and lemon juice.
  • 5 remove from heat and allow to cool.
  • 6 preheat oven to 220 degrees c.
  • 7 combine with crumbled feta cheese.
  • 8 divide mixture into each puff pastry slice.
  • 9 turn puff pastry corner to corner to make a triangle and press ends together.
  • 10 brush with beaten egg.
  • 11 bake in oven for 20 minutes.
