Fresh Peach Pie (no Bake) With Oil Pastry Crust

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons sugar
  • 2 tablespoons milk
  • 1/2 cup oil
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 (3 ounce) package peach gelatin
  • 3 cups sliced peeled ripe peaches

Recipe

  • 1 for crust: mix all ingredients with a fork and press into a 9-inch pie plate.
  • 2 prick all over with a fork.
  • 3 bake at 400 degrees for 12 minutes.
  • 4 for pie: in a saucepan, combine sugar, cornstarch and water until smooth.
  • 5 cook and stir over medium heat until bubbly and thickened.
  • 6 remove from the heat; stir in gelatin until dissolved. cool.
  • 7 arrange peaches in crust; pour filling over peaches.
  • 8 chill until set, about 2 hours.
  • 9 serve topped with whipped cream.
