Fresh Rhubarb Pie

- 4 cups chopped rhubarb
- 1 1/3 cups sugar
- 6 tablespoons all-purpose flour
- 1 tablespoon butter
- 1 (9 inch) pastry for double-crust pie
Recipe
- 1 preheat oven to 450 degrees f.
- 2 combine sugar and flour.
- 3 sprinkle 1/4 of it over pastry in pie plate. heap rhubarb over this mixture.
- 4 sprinkle with remaining sugar and flour.
- 5 dot with small pieces of butter. cover with top crust.
- 6 place pie on lowest rack in oven.
- 7 bake for 15 minutes.
- 8 reduce oven temperature to 350 degrees f, and continue baking for 40 to 45 minutes.
- 9 serve warm or cold.
