Salmon & Orange Pinwheels

Ingredients
- 1 (200 g) can pink salmon (i use red)
- 1 cup cheese, cheddar grated
- 1 tablespoon orange zest
- salt & pepper
- 4 shallots, chopped
- 2 cups self raising flour
- 1 teaspoon salt
- 2 tablespoons butter
- 1 orange, juice of
Recipe
- 1 drain salmon and flake; add cheese, shallots, zest, salt, pepper and mix together.
- 2 pastry; sift together flour & salt, rub in butter and add enough liquid to form a soft dough.
- 3 roll to a 12 1/2" x 6" rectangle, spread with salmon mixture.
- 4 roll up long side and cut into 1 1/2" slices and arrange cut side up in 2 greased tins.
- 5 brush with melted butter and bake at 200degc (400degf) for 20 minutes - cook straight after preparation.
