Scotch Oat Cookies

Ingredients
- 1 cup butter, if you wish (may use 1/2 butter 1/2 shortening)
- 3/4 cup brown sugar
- 1 1/2 cups unbleached flour (or all purpose)
- 2 cups rolled oats
- 1 teaspoon vanilla
- 1/4 cup boiling water
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Recipe
- 1 cream butter, sugar and vanilla.
- 2 add dry ingredients.
- 3 dissolve soda in boilig water and add to mixture.
- 4 roll out on floured pastry sheet.
- 5 cut into 2 inch rounds.
- 6 bake 325 degrees for 20 minutes or until golden brown.
