Libbie's Black Bottom Pie

Total Time: 2 hrs Preparation Time: 1 hr Cook Time: 1 hr

Ingredients

  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 2 cups milk, scalded
  • 4 egg yolks, beaten
  • 1 teaspoon vanilla
  • 1 (6 ounce) package chocolate chips
  • 1 (9 inch) pastry shells, baked and cooled
  • 1 (1/4 ounce) envelope unflavored gelatin
  • 1/4 cup cold water
  • 4 egg whites
  • 1/2 cup sugar

Recipe

  • 1 combine 1/2 cup sugar and cornstarch in the top of a double boiler.
  • 2 slowly add scalded milk to beaten egg yolks; stir into sugar mixture.
  • 3 cook and stir in top of double boiler over hot, but not boiling, water until custard coats spoon.
  • 4 remove from heat and add vanilla to 1 cup of the custard.
  • 5 add the chocolate chips and stir until melted.
  • 6 pour this mixture into the bottom of the baked and cooled pie shell; chill.
  • 7 meanwhile soften gelatin in cold water; add remaining hot custard; stir until dissolved. chill until slightly thick.
  • 8 beat egg whites until soft peaks form; beat in 1/2 cup sugar and continue beating until stiff peaks form.
  • 9 fold in the custard gelatin mixture.
  • 10 pile over chocolate layer; chill until set.
