Libbie's Black Bottom Pie

Ingredients
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 2 cups milk, scalded
- 4 egg yolks, beaten
- 1 teaspoon vanilla
- 1 (6 ounce) package chocolate chips
- 1 (9 inch) pastry shells, baked and cooled
- 1 (1/4 ounce) envelope unflavored gelatin
- 1/4 cup cold water
- 4 egg whites
- 1/2 cup sugar
Recipe
- 1 combine 1/2 cup sugar and cornstarch in the top of a double boiler.
- 2 slowly add scalded milk to beaten egg yolks; stir into sugar mixture.
- 3 cook and stir in top of double boiler over hot, but not boiling, water until custard coats spoon.
- 4 remove from heat and add vanilla to 1 cup of the custard.
- 5 add the chocolate chips and stir until melted.
- 6 pour this mixture into the bottom of the baked and cooled pie shell; chill.
- 7 meanwhile soften gelatin in cold water; add remaining hot custard; stir until dissolved. chill until slightly thick.
- 8 beat egg whites until soft peaks form; beat in 1/2 cup sugar and continue beating until stiff peaks form.
- 9 fold in the custard gelatin mixture.
- 10 pile over chocolate layer; chill until set.
