Crosby Molasses Butter Tarts

Ingredients

  • pie pastry
  • 1 cup raisins
  • 1 cup boiling water
  • 2 tablespoons butter
  • 1/2 cup sugar
  • 1/4 cup molasses
  • 1 egg, well beaten
  • 1 teaspoon vanilla

Recipe

  • 1 line 12-cup muffin tin with pastry; prick bottoms with fork.
  • 2 pour boiling water over raisins and let stand for 20 minutes. drain. immediately add remaining ingredients and stir well. add filling to tart shells.
  • 3 baske at 425f for 12-15 minutes.
