Healthy Blueberry Scones

Ingredients

  • Servings: 24
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 tablespoons butter substitute
  • 1 egg
  • 3/4 cup low-fat buttermilk
  • 1 teaspoon vanilla
  • 1 cup blueberries

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 line a large baking sheet with a silicone mat or parchment paper.
  • 3 combine flour, sugar, baking powder, baking soda and salt in a large bowl. cut butter into flour mixture with a pastry blender or two knives until it resembles a coarse crumbs.
  • 4 add egg, buttermilk and vanilla. stir with a fork until a dough forms. fold in blueberries. drop by tablespoonfuls onto prepared baking sheet.
  • 5 bake for 12-14 minutes.
  • 6 yield 24 small scones.
