Salmon Quiche

Ingredients

- 1 1/3 cups flour
- 155 g butter
- 1 egg yolk
- water
- 2 tablespoons olive oil
- 250 g salmon
- 3 onions, finely chopped
- 300 g cottage cheese
- 200 g mascarpone
- 180 ml fresh cream
- 4 eggs
- 2 teaspoons oregano
- salt and pepper
- breadcrumbs
Recipe
- 1 for the pastry make in a crumble the flour salt and butter.
- 2 then add the egg yolk and water till the mixture become a firm ball.
- 3 than wrap in cling film and leave to rest for 30 minute.
- 4 prepare the baking dish by spreading it lightly with butter and cover with breadcrumbs.
- 5 open the pastry and put it in the dish over the breadcrumbs.
- 6 put in the fridge for 15min meanwhile make the filling.
- 7 heat olive oil in a pan and cook the onions and leave aside to cool.
- 8 in a bowl mix the cottage cheese, mascarpone and fresh cream.
- 9 add salmon and eggs.
- 10 take out the pastry from the fridge, spread the onions on the pastry and spread the salmon mixture on the onions.
- 11 bake for 40 minute.
