One-egg Pound Cake

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup sugar
  • 1 teaspoon salt
  • 1/2 cup butter, cold
  • 1 egg
  • 1 cup milk (approximately)
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract

Recipe

  • 1 preheat oven to 350 degrees f (175 degrees c); grease and flour an 8x4" loaf pan.
  • 2 in a large bowl, mix flour, baking powder, sugar and salt.
  • 3 with a pastry cutter or your fingers, cut in butter.
  • 4 break the egg into a measuring cup and then fill to the 1 cup line with milk.
  • 5 add the milk mixture to the dry ingredients and beat well.
  • 6 add vanilla and lemon extracts and beat until well-blended.
  • 7 pour batter into the prepared pan and bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
