One-egg Pound Cake

Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 cup sugar
- 1 teaspoon salt
- 1/2 cup butter, cold
- 1 egg
- 1 cup milk (approximately)
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
Recipe
- 1 preheat oven to 350 degrees f (175 degrees c); grease and flour an 8x4" loaf pan.
- 2 in a large bowl, mix flour, baking powder, sugar and salt.
- 3 with a pastry cutter or your fingers, cut in butter.
- 4 break the egg into a measuring cup and then fill to the 1 cup line with milk.
- 5 add the milk mixture to the dry ingredients and beat well.
- 6 add vanilla and lemon extracts and beat until well-blended.
- 7 pour batter into the prepared pan and bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
