Perfect Summer Fruit Cobbler

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 6 cups fruit (slice or chop as you like)
  • 2 cups flour
  • 1/2 cup sugar, plus
  • 2/3 cup sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup margarine or 1/2 cup butter
  • 1 cup milk
  • 1/4 cup cornstarch
  • 1 1/2 cups boiling water

Recipe

  • 1 preheat oven to 350°.
  • 2 place fruit in 9x13-inch pan that's been well sprayed with cooking spray. in a bowl, combine flour, 1/2 cup sugar, baking powder and salt. with pastry blender or your fingers, cut in margarine or butter till mealy. stir in milk and mix until a soft dough forms. spoon evenly over fruit.
  • 3 in a small bowl, combine the 2/3 cup sugar, and the cornstarch. sprinkle evenly over the batter. then pour boiling water over all--do not stir!
  • 4 bake for 45 minutes or till fruit is bubbly and top is golden. serve warm or cold.
