Pumpkin Pancakes For One

Ingredients
- 1/4 cup pumpkin
- 1 egg
- 1/4 cup buttermilk
- 1/3 cup whole wheat pastry flour
- 1/2 teaspoon baking soda
- 1 pinch salt
- 2 teaspoons sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
Recipe
- 1 stir the flour, baking soda, salt, sugar, cinnamon, nutmeg, and ginger together in a small bowl.
- 2 in a separate bowl, whisk together the egg , pumpkin, and buttermilk.
- 3 stir into the dry ingredients and stir just enough to moisten everything (there will still be a few lumps and that’s fine).
- 4 heat a skillet over medium high heat and spray with nonstick spray. pour half the batter into the preheated pan and cook until bubbles appear on the top, about 3 minutes. flip and cook an additional minute or two. repeat with remaining batter. serve with maple syrup.
