Rhubarb Pie

Total Time: 1 hr

Ingredients

  • Servings: 6
  • 1 1/2 cups sugar
  • 4 cups rhubarb, cut in 1" slices (1 lb)
  • 1/4 cup enriched flour
  • 1 9" pastry crust with lattice top
  • 3/4 teaspoon nutmeg
  • 2 tablespoons butter or 2 tablespoons margarine
  • 3 eggs, slightly beaten

Recipe

  • 1 blend sugar, flour, nutmeg.
  • 2 beat into eggs.
  • 3 add rhubarb.
  • 4 line 9" pie plate with pastry; fill; dot with butter.
  • 5 top with lattice crust.
  • 6 bake at 400 degrees 50 to 60 minutes.
  • 7 cool.
