Environs Cranberry Pie

Ingredients
- 4 cups fresh cranberries
- 3 tablespoons cornstarch
- 1 egg, lightly beaten
- 1/2 teaspoon vanilla extract
- 1 1/2 cups sugar
- 2 pie crusts, top and bottom
Recipe
- 1 preheat oven to 400 degrees.
- 2 wash cranberries and drain.
- 3 chop cranberries by hand or in food processor, then mix with sugar and cornstarch.
- 4 mix egg with vanilla extract, then add to cranberries.
- 5 mix until combined.
- 6 put bottom crust over pie pan.
- 7 pour mixture into bottom crust.
- 8 cut top crust into strips.
- 9 cover fruit with strips of pastry into lattice.
- 10 bake at 400 degrees for 10 minutes.
- 11 reduce heat to 350 degrees and bake for 45 minutes or until fillings bubble and pastry brown.
- 12 service with whipped cream or ice cream.
