Oatmeal-honey Loaf (deaf Smith Cookbook)

Ingredients
- 1 cup oats (not instant)
- 1 cup boiling water
- 2 1/4 cups whole wheat pastry flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon sea salt
- 5 tablespoons powdered milk (non-instant)
- 1/4 cup melted butter or 1/4 cup oil
- 3 tablespoons honey
- 1 egg
- 2/3 cup water
Recipe
- 1 in large bowl combine oats and boiling water; stir until mixed. let sit 2 hours; add butter and honey.
- 2 sift together flour, baking powder and salt; add milk powder.
- 3 beat egg and water. add flour mixture; add this mixture to the oatmeal and mix well (do not overmix).
- 4 turn into an oiled 9" x 5" loaf pan and bake at 350 f for 60-70 minutes, until crust is golden. turn onto rack to cool.
