Oatmeal-honey Loaf (deaf Smith Cookbook)

Total Time: 1 hr Cook Time: 1 hr

Ingredients

  • 1 cup oats (not instant)
  • 1 cup boiling water
  • 2 1/4 cups whole wheat pastry flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 5 tablespoons powdered milk (non-instant)
  • 1/4 cup melted butter or 1/4 cup oil
  • 3 tablespoons honey
  • 1 egg
  • 2/3 cup water

Recipe

  • 1 in large bowl combine oats and boiling water; stir until mixed. let sit 2 hours; add butter and honey.
  • 2 sift together flour, baking powder and salt; add milk powder.
  • 3 beat egg and water. add flour mixture; add this mixture to the oatmeal and mix well (do not overmix).
  • 4 turn into an oiled 9" x 5" loaf pan and bake at 350 f for 60-70 minutes, until crust is golden. turn onto rack to cool.
