Oatmeal Shortbread

- 3 cups raw quick-cooking oats
- 2/3 cup sugar
- 1/2 cup sifted all-purpose flour, sift before measuring
- 1/2 teaspoon salt
- 3/4 cup butter or 3/4 cup margarine
- 1 teaspoon vanilla extract
Recipe
- 1 preheat oven to 350°f lightly grease a 13x9x2 inch pan.
- 2 in large bowl, combine oats, sugar, flour and salt.
- 3 with pastry blender or fork, cut in butter until texture of coarse cornmeal. stir in vanilla; mix well.
- 4 with hands, press mixture evenly into prepared pan.
- 5 bake 20 to 25 minutes, or until golden. cool slightly.
- 6 cut into bars while still warm. let cool completely in pan.
