Oatmeal Shortbread

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 24
  • 3 cups raw quick-cooking oats
  • 2/3 cup sugar
  • 1/2 cup sifted all-purpose flour, sift before measuring
  • 1/2 teaspoon salt
  • 3/4 cup butter or 3/4 cup margarine
  • 1 teaspoon vanilla extract

Recipe

  • 1 preheat oven to 350°f lightly grease a 13x9x2 inch pan.
  • 2 in large bowl, combine oats, sugar, flour and salt.
  • 3 with pastry blender or fork, cut in butter until texture of coarse cornmeal. stir in vanilla; mix well.
  • 4 with hands, press mixture evenly into prepared pan.
  • 5 bake 20 to 25 minutes, or until golden. cool slightly.
  • 6 cut into bars while still warm. let cool completely in pan.
