Pear Cranberry Pie With Oatmeal Streusel

Ingredients

  • 3/4 cup oats
  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 dash salt
  • 2 tablespoons butter, chilled and cut into small pieces
  • 3 cups anjou pears, cubed into 1/2-inch pieces (about 2 pears)
  • 2 cups cranberries
  • 2/3 cup light brown sugar, packed
  • 2 1/2 tablespoons cornstarch
  • 1 unbaked 9-inch pie shell

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 to prepare streusel, combine first 5 ingredients in a medium bowl.
  • 3 cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal.
  • 4 to prepare filling, combine pears, cranberries, 2/3 cup brown sugar, and cornstarch in a large bowl. toss well to combine.
  • 5 spoon pear mixture into pastry shell; sprinkle streusel over pear mixture.
  • 6 bake for 1 hour, or until bubbly and streusel is browned.
  • 7 cool at least 1 hour on a wire rack.
