Pine Nut Caramel Bars

Ingredients

  • 3/4 cup unsalted butter, room temperature
  • 1/3 cup sugar
  • 2 1/4 teaspoons grated lemons, rind of
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter
  • 6 tablespoons firmly packed dark brown sugar
  • 1/4 cup honey
  • 1 3/4 cups pine nuts
  • 1 1/2 tablespoons whipping cream

Recipe

  • 1 for pastry:.
  • 2 preheat oven to 350°f line 8-inch square glass baking dish with foil.

  • 13 whisk over medium-high heat until mixture comes to boil.
  • 14 boil without whisking until mixture thickens and bubbles enlarge, about 1 minute.
  • 15 stir in pine nuts.
  • 16 remove from heat; stir in whipping cream.
  • 17 spread topping in crust.
  • 18 bake until caramel bubbles, about 20 minutes.
  • 19 cool completely in pan on rack.
  • 20 remove from pan, using foil as aid.
  • 21 cut into squares.
