Honey-pecan Finger Pies

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 1 1/4 cups flour
  • 1/3 cup sugar
  • 1/2 cup butter, softened
  • 2/3 cup sugar
  • 1/2 cup honey
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 2 eggs, lightly beaten
  • 2 tablespoons butter, melted
  • 1 1/2 teaspoons vanilla extract
  • 1 cup pecans

Recipe

  • 1 combine 1 1/4 cups flour and 1/3 cup sugar in a bowl; cut 1/2 cup butter into flour mixture with a pastry blender until mixture resembles coarse meal.
  • 2 press firmly and evenly into an ungreased 9x13 inch pan.
  • 3 bake at 375* for 10 to 15 minutes or until edges are lightly browned.
  • 4 combine 2/3 cup sugar and remaining ingredients; pour over prepared crust.
  • 5 bake at 375* for 20 to 25 minutes, shielding with foil the last 5 minutes, if necessary.
  • 6 cool on a wire rack.
  • 7 cut into 1 1/2-x1-inch bars.
  • 8 yield: 4 1/2 dozen.
