Irish Whiskey Soda Bread

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • 4 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 cup butter, chilled and cut in small cubes
  • 1 1/2 cups buttermilk
  • 1/4 cup liquid honey
  • 1/4 cup irish whiskey or 1/4 cup buttermilk
  • 2 teaspoons irish whiskey
  • 2 teaspoons milk

Recipe

  • 1 preheat oven to 350ºf.
  • 2 line a cookie sheet with parchment paper, or lightly grease.
  • 3 combine flour, salt and baking soda in a bowl.
  • 4 with a pastry blender, cut in butter until mixture resembles coarse crumbs.
  • 5 in a small bowl or 2 cup measure, mix buttermilk, honey & whiskey.
  • 6 add all at once to dry mixture and stir just until no dry spots remain.
  • 7 turn onto lightly floured surface and knead for 1 minute (too much will toughen and too little will inhibit rising).
  • 8 divide dough in half and shape into round loaves.
  • 9 place on cookie sheet. with a floured knife cut a cross 1/2 inch deep in each loaf.
  • 10 in small cup, combine whiskey and milk.
  • 11 brush loaves with glaze.
  • 12 bake for 35-40 minutes or until loaves sound hollow when tapped on bottoms. remove from pans and let cool on wire racks.
  • 13 cut into wedges or slices and serve warm.
