Irish Whiskey Soda Bread

Ingredients
- 4 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/4 cup butter, chilled and cut in small cubes
- 1 1/2 cups buttermilk
- 1/4 cup liquid honey
- 1/4 cup irish whiskey or 1/4 cup buttermilk
- 2 teaspoons irish whiskey
- 2 teaspoons milk
Recipe
- 1 preheat oven to 350ºf.
- 2 line a cookie sheet with parchment paper, or lightly grease.
- 3 combine flour, salt and baking soda in a bowl.
- 4 with a pastry blender, cut in butter until mixture resembles coarse crumbs.
- 5 in a small bowl or 2 cup measure, mix buttermilk, honey & whiskey.
- 6 add all at once to dry mixture and stir just until no dry spots remain.
- 7 turn onto lightly floured surface and knead for 1 minute (too much will toughen and too little will inhibit rising).
- 8 divide dough in half and shape into round loaves.
- 9 place on cookie sheet. with a floured knife cut a cross 1/2 inch deep in each loaf.
- 10 in small cup, combine whiskey and milk.
- 11 brush loaves with glaze.
- 12 bake for 35-40 minutes or until loaves sound hollow when tapped on bottoms. remove from pans and let cool on wire racks.
- 13 cut into wedges or slices and serve warm.
