Tirobiskotakia - Layered Cheese Squares

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 cups milk, warm
  • 3/4 teaspoon salt (less if the feta is very salty)
  • 1/4 teaspoon pepper
  • 2 cups feta, crumbled
  • 8 ounces cottage cheese, small curd
  • 4 ounces cream cheese, softened
  • 6 eggs, beaten
  • pastry dough (see recipe link)
  • olive, sliced (optional)

Recipe

  • 1 melt butter in heavy saucepan.
  • 2 blend in flour, stirring constantly for 2 minutes to form a paste.
  • 3 add milk with salt and pepper; stir constantly until sauce thickens.
  • 4 remove from heat.
  • 5 in a large bowl, combine cheeses with eggs; pour into cream sauce and mix well. set aside.
  • 6 remove prepared dough from refrigerator; allow to come to room temperature.
  • 7 press into bottom of 13 x 9 -inch baking pan.
  • 8 bake shell at 450°f for 10 minutes.
  • 9 remove from oven; pour filling over crust.
  • 10 bake at 350°f for 30-35 minutes.
  • 11 let stand 15 minutes before cutting into squares.
  • 12 garnish with olives.
  • 13 serve warm.
