Tirobiskotakia - Layered Cheese Squares

Ingredients
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups milk, warm
- 3/4 teaspoon salt (less if the feta is very salty)
- 1/4 teaspoon pepper
- 2 cups feta, crumbled
- 8 ounces cottage cheese, small curd
- 4 ounces cream cheese, softened
- 6 eggs, beaten
- pastry dough (see recipe link)
- olive, sliced (optional)
Recipe
- 1 melt butter in heavy saucepan.
- 2 blend in flour, stirring constantly for 2 minutes to form a paste.
- 3 add milk with salt and pepper; stir constantly until sauce thickens.
- 4 remove from heat.
- 5 in a large bowl, combine cheeses with eggs; pour into cream sauce and mix well. set aside.
- 6 remove prepared dough from refrigerator; allow to come to room temperature.
- 7 press into bottom of 13 x 9 -inch baking pan.
- 8 bake shell at 450°f for 10 minutes.
- 9 remove from oven; pour filling over crust.
- 10 bake at 350°f for 30-35 minutes.
- 11 let stand 15 minutes before cutting into squares.
- 12 garnish with olives.
- 13 serve warm.
