Ingredients
- 1 cup butter
- 1/2 cup icing sugar
- 2 cups flour
- 3 large eggs
- 2 cups sugar
- 5 tablespoons flour
- 6 tablespoons fresh lemon juice
- 2 tablespoons lemon zest
- icing sugar
Recipe
- 1 base: mix with pastry blender. pat firmly into 13x9-inch baking pan and bake at 350f for 20 minutes.
- 2 filling: mix together eggs, sugar, flour, lemon juice and lemon zest. spread on base. bake 20-25 minutes.
- 3 cool completely. cut into squares.
- 4 top with icing sugar while still warm. place back inside the turned-off oven with door open for 2-3 minutes more. this prevents beading.
