Lemon Squares

Ingredients

  • 1 cup butter
  • 1/2 cup icing sugar
  • 2 cups flour
  • 3 large eggs
  • 2 cups sugar
  • 5 tablespoons flour
  • 6 tablespoons fresh lemon juice
  • 2 tablespoons lemon zest
  • icing sugar

Recipe

  • 1 base: mix with pastry blender. pat firmly into 13x9-inch baking pan and bake at 350f for 20 minutes.
  • 2 filling: mix together eggs, sugar, flour, lemon juice and lemon zest. spread on base. bake 20-25 minutes.
  • 3 cool completely. cut into squares.
  • 4 top with icing sugar while still warm. place back inside the turned-off oven with door open for 2-3 minutes more. this prevents beading.
